The Blue Whale, a restaurant at the Fire Island Pines resort community, has a new chef. He’s Gregory Torrech, and he’s cooked at such Manhattan places as La Esquina, Allen & Delancey and Resto.
Torrech’s “progressive seasonal American” repertoire includes such dishes as olive oil-poached cod with grapes, fennel and orange ($26) and whole roasted Florida red snapper with cucumber-onion yogurt salad ($36).
