New to Glen Cove is Manka Peruvian Kitchen, situated in the strip mall storefront space that last housed Rosticini Italian Grill. Look for it behind Wendy's.

Chef-owner Boris Torres, who came to the U.S. from Peru as a child, grew up in the restaurant business. His family still owns El Anzuelo Fino, a Peruvian restaurant with branches in both Jackson Heights and Woodhaven. But instead of going directly into a culinary career, Torres studied architecture and worked for three years as an architect in Boston. His passion for cooking ultimately led him to study at the French Culinary Institute in Manhattan (now called the International Culinary Center) and to stints working under such chefs as Daniel Boulud and Marcus Samuelsson.

On his menu at Manka: anticuchos, or skewered veal hearts ($7), a rotisserie chicken platter ($11), grilled pork chops ($16), chaufa, or fried rice, with seafood ($16), and lomo saltado, a traditional stir-fry of steak, vegetables and French fries ($17).

The restaurant, which features table service, is still awaiting its liquor license.
