A sustainable farm-to-table sensibility defines the new Freshark Juice Bar & Grill, which opened in the vacated Rockville Centre digs of Plaza Seafood. The counter-serve spot, built with repurposed wood and fixtures, is all about healthy eating, serving three squares a day. Meat and poultry are antibiotic- and hormone-free; produce is locally sourced when possible. And everything is cooked to order, never microwaved. Or fried.

The place was conceived by co-owners Peter Kambitsis and Elias Kalogiros, who also own Ripe Juice Bar & Grill in Forest Hills. Mark J. Sarro, who owned Corner Kitchen in Atlantic Beach, is the executive chef.

On his menu: an egg white “triathlete” vegetable breakfast wrap ($6.79), sweet potato “power cakes” ($7.99), a Mediterranean salad ($10.49) and a quinoa veggie burger ($6.99). You can build a platter ($8.95 to $14.95) choosing a protein, such as grilled salmon, grilled chicken or steak burger, adding a dressing plus two sides (like quinoa or steamed broccoli). Alternatively, you can get a wrap or “bowl” featuring grilled chicken or portobello mushroom in a variety of styles, among them spicy Thai, Tex-Mex and Greek ($7.99-$8.99) over salad greens, or, for an extra $1.49, brown rice.

Also in the repertoire: freshly squeezed juices, smoothies and protein shakes.
