After several successful pop-ups in Amagansett, PopUp Bagels will finally have a permanent home in the Hamptons when its Westhampton Beach opens today, at 130 Main Street.

The Westhampton opening confirms PopUp's continued popularity on the Island and will serve the same hot bagels and rotating cream cheese and butter schmears. For those unfamiliar with PopUp Bagels, they offer a menu of smaller, more compact bagels than many Long Island bagel shops. More dense, with a chewy center and crispy exterior, PopUp Bagels are served warm alongside requisite cream cheese cups. Guests are encouraged to use their hands to "grip, rip and dip" the hot bagels into their chosen schmear. For the Westhampton opening, PopUp is partnering with Southampton-based Tate’s Bake Shop for a limited-time Tate’s Chocolate Chip Cookie schmear. From June 18 to July 1, all locations will be featuring the Oishii Berry Schmear, a strawberry cream cheese made with Oishii Nikko berries that sold out its limited run last year.

Bagels come in poppy, sesame, plain, salt and everything varieties. Cream cheese flavors change weekly and are often collaborations. Past collabs have included mashups like Grillo’s Pickle de Gallo and Sabatino Truffles cream cheeses; other popular flavors have included hot sauce, jalapeño cheddar, lemon pepper, scallion, and cacio e pepe. But it’s not just savory schmears. Sweet versions have included Oreo, Butterfinger and Poppi creamsicle flavors, as well as coffee milk and banana bread chocolate chip. There is also a weekly specialty butter; the shallot butter is a home run.

Bagels can be purchased in-store in increments of three ($13, including one schmear), six (plus one schmear, $21) and 12 (plus two schmears, $46). Extra schmears are $7, and a vegan version is $10. Besides bagels and schmears, smoked fish — lox runs $12 for 4 ounces and $22 for 8 ounces, whitefish salad ($20) and trout roe ($24) — are also available. Preordered and delivery options are also available.

The Connecticut-based, carb-and-schmear sensation took off during the pandemic, when its owner, Adam Goldberg, found himself "bored of the sourdough trend," so tried his hand at a bagel recipe. A quick hit with friends and family, he eventually started selling the bagels from a pop-up window in his backyard.

Its tagline, "Not Famous, but Known," has become somewhat misleading given the 28 locations that have spread across the country. Its first Long Island brick-and-mortar opened in Roslyn in 2024, with another opening in Nassau on the horizon, in Uniondale.
