Prime, the sharp waterfront restaurant in Huntington, likes to take road trips with its menu, visiting a region every few weeks. Currently: California.
That means a very mellow spring-onion custard, surrounded by a fricassee of mushrooms; shaved asparagus salad; roasted salmon with spinach and tomato confit; and organic chicken paired with fava beans, baby leeks and mushrooms.
It also takes in two excellent desserts: a fig-and-almond tart with sweetened mascarpone cream; and an individual lemon meringue pie complemented with blueberry sorbet.
Of course, you still can enjoy the house's slightly spicy 'millennium' lobster, stylish sushi, and first-rate steaks. And then there are those housemade Tater Tots that restore your faith in spuds gone wild.
