After four years rolling and smoking around Long Island in their customized barbecue truck, Kerry and Rich Ciota parked long enough to open a restaurant in Lake Ronkonkoma. Rich Ciota, owner, of Rolling Smoke, explained how they perfectly season their famous "dinosaur rib," a 9-inch length of short rib.
