Roots in West Islip: Uncorking a wine dinner

The cost of the six-course, Sept. 25 dinner is $90 per person. Dinner starts at 6 p.m.
Dishes include roasted monkfish with red wine, pearl red onions, carrots and celery-root mousse paired with a 2010 Domaine Galevan Grenache; and pressed pork-belly confit with shallot mousseline, roasted peaches and hearts of palm matched with a 2010 Domaine Naudan Varrault Chardonnay. The apple-and-pear spin on tarte Tatin with maple-walnut ice cream goes with a 2007 L'Etoile Banyuls.
