Entering the expanding directory of number-named restaurants is Six Three One in Southold. It takes over the former JD Steakhouse digs.

The place is owned by Archie Dellaportas, whose holdings also include the Belaire Diner in Astoria. His son Kalergis — or Kal — is the chef. A graduate of the French Culinary Institute in Manhattan, his menu both embraces and veers from the diner archetype. Yes, there’s breakfast all day, but dinner dishes are only served in the evening. The menu is also shorter and more inventive than what you’d find at a typical diner and draws on local ingredients whenever possible.

On the breakfast menu, you’ll find the “un-pitable” ($9), two eggs topped with char-roasted heirloom tomatoes, pita chips and herb oil. Also  buttermilk pancakes ($6) and a Monte Cristo sandwich ($9). At lunch, there’s a half-pound burger ($8), a cheesesteak ($16) and a panko chicken Parmigiana sandwich ($9). Dinner may start with crabcakes ($9), charred octopus ($14) or spinach pie ($8), to be followed by such entree options as pastichio ($14), calamari fra diavolo ($19) or a roasted half chicken ($17). House-baked New York style cheesecake ($5) and rice pudding ($5) are two finales.

Kal Dellaportas said the restaurant currently opens daily at 6 a.m. and closes at 11 p.m. Later night hours are planned for the future.

Six Three One is at 62375 Main Rd., Southold, 631- 876-1079.
