You don't have to be a carnivore to eat well at an Asian restaurant. Traditionally, Asian cultures place a greater emphasis on vegetables than on meat.

Here are three Asian restaurants where the menus include excellent alternatives to meat and fish.

One of the standouts at this well-appointed Asian newcomer is a fragrant and full-flavored stir-fry of eggplant and tofu with basil garlic sauce.

The tofu teriyaki at this combination sushi and hibachi restaurant features cubes of fresh, soft Japanese tofu that are lightly coated with tempura flour, flash-fried, then drizzled with tempura sauce. A light crunch yields to a lush interior.

At this Japanese strip-mall spot, vegetarians as well as carnivores would do well to order either the peanut- avocado roll or the sweet potato tempura roll. Better yet, both.
