Matt Hisiger cooks coastal in Port Washington

Matthew Hisiger, who earned four stars for the now-gone Panama Hatties in Huntington Station, is preparing a series of open-to-the-public, coastal-cuisine dinners at H on the Harbor caterers in Port Washington.
“It's a nice change,“ said Hisiger, who defined the New American style at Panama Hatties for 18 years and later worked for Sbarro for three years.
Hisiger joined H on the Harbor, a catering and events space, as culinary director earlier this year. Generally, H on the Harbor is used for private events.
But July 9 and 10, Hisiger will offer a Sicilian-themed dinner at “The H Supper Club” at H on the Harbor. The $85 dinner will include dishes such as grilled eggplant caponata; pasta with almond pesto; braised short rib with an espresso rub; roast swordfish; a salad of rocket, blood orange and fennel; and cheeses and sweets. Dinner begins at 7:30 p.m.

Coastal regions to be represented after Sicily for the Wednesday and Thursday dinners will include the French Riviera, Vietnam and Cambodia, Marbella, and Lisbon.
