Mirabelle, the four-star restaurant in the Three Village Inn, has retooled, now offering a $35 fixed-price menu and a $90 tasting menu to go with the a la carte choices.

Chef Guy Reuge's "simple prix fixe" includes three courses. The choices include manila clam chowder, a greens-and-goat cheese salad, or braised Berkshire pork belly with roasted spicy pineapple; then, either snapper with asparagus couscous, roasted rack of lamb with potato gnocchi and chanterelles, or fettuccine with chicken ragout and wilted greens; and, to conclude, either tarte Tatin with black-pepper ice cream or a trio of sorbets.

The "grand tasting menu" is a nine-course affair. The courses may be paired with wines, too. The cost of the wine-pairing menu is $145. The dishes will vary based on the market.

Reuge's a la carte menu includes appetizers in the $10-$24 range; main dishes, $29-$38; and sweets, $9.50. The house's duck served in two courses, featuring seared breast and confit of leg, is $38.

Mirabelle is at 150 Main St., Stony Brook; 631-751-0555.
