Not only will the newly restored Suffolk Theater make its debut Saturday night, but so, too, will chef Tom Schaudel as its new culinary director. Schaudel, who is also executive chef at A Lure in Southold and Jewel in Melville, will be putting out the food for a time-travel “back to the thirties” cocktail party gala, with period music provided by Vince Giordana and the Nighthawks Orchestra. Schaudel described the Suffolk as a kind of '30s tiered supper club with tables. On performance nights, servers will take orders — which are optional — for drinks as well as for dishes on an American tapas menu, running about $9 to $16 a plate. Choices include Peconic Bay clam fritters with smoked tomato rémoulade, tuna sashimi tempura and a chicken tostada.

“I’d like to be part of the renaissance of Riverhead, even in some small way,” Schaudel said.
