The Frosé at Le Dock (Bay Walk, Fair Harbor, Fire Island): "You don't realize how dangerous it is till it's too late," the bartender told us at this Fair Harbor favorite on Fire Island. Maybe not, but you'll realize soon enough. A few sips into this pastel-tinted slush of wine and vodka, and you'll be lucky if you remember what season it is. Caipirinha at Texas de Brazil (201 Smith Haven Mall, Lake Grove): If you've never had the signature spirit of Brazil, cachaça, then we see a caipirinha in your future. Cachaça is distilled from fermented fresh sugar-cane juice (as opposed to rum, which is traditionally made from molasses) and it serves as the base of caipirinhas at Texas de Brazil Churrascaria in the Smith Haven Mall in Lake Grove. The Frosé at Sunset at Refuge (515 Broadhollow Rd., Melville): This Melville entry might be the most beautiful beverage this summer, a one-of-a-kind combo of pomegranate liqueur and rosé granita. The Mission margarita at Mission Taco (371 New York Ave, Huntington): Just when you thought there might be nothing new in the world of margaritas, along comes the Mission margarita, the signature version at newish Mission Taco in Huntington. Espolon blanco tequila is shaken with a house citrus cordial and then finished with a salty, citrusy egg-white foam shot from a nitrous gun. S'mores Fun at Elsie Lane

S'mores Fun at Elsie Lane (29 Jericho Tpke., New Hyde Park): The S'mores Fun milkshake made with bourbon, vanilla ice cream and Marshmallow Fluff and topped with graham crackers, Hershey Bar pieces, toasted marshmallows and chocolate syrup along with a giant pretzel. The Peach Hut at The Linwood (150 E. Main St, Bay Shore): The new Linwood in Bay Shore claims one of Long Island's most talented bartenders among its ranks, Tracy Johanna, who's also front of house manager, and she frequently adjusts the drinks menu to reflect the season. Peak stone fruit season marks the appearance of The Peach Hut, a foamy blend of Beefeater gin, ginger, white peach, peche de vigne (a peach liqueur), and egg white meringue topped with droplets of blood orange olive oil. The Painkiller at Melissa's Taqueria and Tequila Bar (18 Park Ave., Rockville Centre): It may not be the most potent potable at this new hot spot in Rockville Centre, but the rum, coconut, pineapple and orange juice concoction is nonetheless a standout.
