Sagamore Steakhouse, a hot meeting place and two-star bastion of beef, has retooled its image plus its name. Now: Rare 650, emphasizing sushi as much as steak. The new approach mirrors that of Blackstone Steakhouse in Melville, its sister eatery.

During the last year or so, Sagamore was becoming more aggressively Hamptonian in attitude and ambience. Now it has gone all the way.

Last night, a roadside sign advised: sushi bar open. As if to bring together the two styles, the house offers a Kobe tartare roll. You'll also find a lobster roll, an Italian roll (yes, Parmesan cheese and balsamic syrup included), and a well-chosen sake list.

Appetizers include crudo, or Italianate/New American riffs on sushi. For Sagamore fans, the mini-Kobe burger flight remains, as do the dry-aged steaks and New York-style cheesecake.
