John Maher has been baking up a storm at The Flour Shoppe Café in Rockville Centre. His latest invention is the KitKat croissant, wherein a snack-sized KitKat bar fills in for the semisweet chocolate stick used in a classic pain au chocolat. In the baking, the chocolate melts obligingly, the crisp wafer retains its crunch.

Maher said that he had also experimented with Twix, but that the KitKat fit perfectly.

The KitKat croissant, $4.50, is an end-of-week special at The Flour Shoppe Café. The first batch comes out of the oven on Thursday afternoon and the kitchen keeps them coming through Sunday.
