LI’s most restless chef, Tom Schaudel, is having a good month.

For one thing, he’ll be the first LI food personality to be inducted into the Hall of Fame of a new restaurant entrepreneurial organization called LIDA (Long Island Dining Alliance). The driving force behind Coolfish in Syosset, A Mano in Mattituck and many other restaurants past, Schaudel also authored the book “Playing with Fire – Whining and Dining on the Gold Coast.” The induction ceremony will take place April 19 at LIDA’s kickoff party at Carlyle on the Green in Farmingdale.

For another thing, Schaudel just closed on a deal to be manager/consultant/executive chef of a restaurant in an enormous 8,000 square foot space within a new Melville office building, Ruby’s Corporate Plaza. Schaudel said he envisions a “market-driven brasserie and wine bar with an accent on local produce and products — as Long Island-based as we can make it.” Although the space has yet to be designed, Schaudel is aiming for an opening this November.

Which means, probably, any time after that.
