Veteran sushi chef gone from Satsuki, Lynbrook

Hisashi Manabe, who, for over 20 years, crafted some of Long Island’s best sushi rolls, is no longer at Satsuki in Lynbrook. The restaurant is under the new ownership of Patrick Wong, who is also the sushi chef. He said that Manabe's menu remains the same, with a few additions, and that the crew from before has stayed on.
Manabe was known for his ethereally light rolls, which seemed held together by air, and for his impeccably fresh well-cut fish.
