The weather forecasters have yet to banish snow from their vocabulary, but at least the calendar has announced that it’s formally spring. Here are three refreshing restaurants to welcome the season.

Vinoco East in Farmingdale bills itself a global-fusion eatery. And you’ll make some lively stops along the way. Recommended: ceviche, prepared tableside; Peruvian-style creamy chicken; open-faced arepa with spicy chicken; braised pork; “guacahummus,” or guacamole and hummus. Moderate.

Noble Kitchen & Cocktails in Oceanside is a warm, neighborhood spot with eclectic fare. Recommended: sea scallops on corn risotto; fish and chips made with cod; Berkshire pork chop; Reuben egg roll; Wagyu burger with tomato chutney and British rarebit Cheddar. Moderate.

Mirabelle, residing elegantly at the Three Village Inn in Stony Brook, is one of Long Island’s best dining destinations. Recommended: housemade charcuterie; Kobe beef sliders; chickpea fries with harissa mayonnaise; smoked trout with celeri remoulade; Peconic Bay scallops ceviche; Peconic Bay scallops fricassee; duck Mirabelle; ginger-almond tart. Expensive.
