Amarelle, the fine New American restaurant in Wading River, hosts a food-and-wine pairing dinner March 18, starring fruity, earthy French "country wines."

The five-course dinner is $75 per person, not including tax and tip.

Amarelle earned two and one-half stars last year, when it made Newsday's list of 2009's 10 best restaurants. This is the first pairing dinner at the eatery.

Wines from the Rhone Valley, the Loire Valley, Languedoc, Jura and Beaujolais will be included. After hors d'oeuvres, the dishes include a seafood nage, with lobster, shrimp, diver scallops and peeky toe crab in a truffled emulsion; beet-and-goat cheese Napoleon; pate made with duck and wild boar; caramel-glazed lamb loin and a black-currant beignet.

Reservations are required for the event, which starts at 6:30 p.m.

Amarelle's chef-owner is Steve Biscari Amaral; its executive chef, Lia Fallon. Wine consultant Ralph DiGennaro and importer Frederick Wildman & Sons, Ltd. contributed to the effort. Amarelle is at 2028 North Country Rd., Wading River; 631-886-2242; e-mail, amarelleny@gmail.com
