Fire Island is about to get hotter.

Celebrity chef Jean-Georges Vongerichten, who will oversee dining at the high-end Topping Rose House in Bridgehampton this season, plans to open a casual, outdoor, beach-resort restaurant at Fair Harbor on Fire Island, too.

The 65-seater, to be called Le Dock, will have a kitchen helmed by Josh Eden, chef at August restaurant in Manhattan. As the name suggests, it’s expected to emphasize seafood. The menu and the price range have not been finalized.

Le Dock also was the name of a now-closed, informal restaurant and bar at the same Bay Walk site, which is undergoing a full renovation.

Vongerichten operates more than 30 restaurants worldwide. His flagship is Jean Georges in Manhattan, where Eden formerly was senior sous chef. Eden also cooked at Vongerichten’s departed JoJo.

Topping Rose House is expected to be retooled under Vongerichten’s management by Memorial Day. The farm-to-table restaurant earned a four-star rating in Newsday in 2012, when it opened with “Top Chef” lead judge Tom Colicchio running the dining room. Topping Rose House also is a luxury resort hotel, with cottages in addition to the Greek Revival main building. Colicchio left early last year.

The dockside Fair Harbor property is owned by Vongerichten’s business partner, Phil Suarez, who also has a residence in the community.
