In my ongoing quest to find tasty, kid-friendly food appropriate for the whole family, this week I chose a delicious twist on classic grilled cheese. I found the recipe on Parents.com

Apple-Cheddar Grilled Cheese
(makes 4 sandwiches)

Ingredients
— Nonstick cooking spray
— 8 slices cinnamon bread
— 8 slices reduced-fat Cheddar cheese
— 1 tart apple, cored and thinly sliced
— 1/4 cup dried cranberries
— 1/4 cup raisins

Directions

1. Coat a nonstick grill pan or sandwich press with cooking spray. Heat to medium.

2. Place four bread slices on a work surface. Divide cheese among four slices and top with apple slices. Sprinkle with cranberries and raisins.

3. Place the remaining bread on sandwiches and grill for three to five minutes or until cheese is melted (turn sandwiches on grill pan once during cooking, replacing fruit as necessary).
