Hot dogs with cucumber salsa Sriracha mayonnaise

For salsa
1/2 cucumber, peeled, seeded, and cut into 1/4-inch dice
1/4 red bell pepper, cut into 1/4-inch dice
2 scallions, white and light green parts, finely chopped
1 tablespoon thinly sliced mint leaves
1 teaspoon grated fresh ginger
1 tablespoon rice wine vinegar
1 tablespoon lime juice
1 teaspoon Asian sesame oil
1/2 teaspoon sugar
1/4 teaspoon salt
For mayonnaise
1/4 cup mayonnaise
1 tablespoon sriracha (Asian hot sauce), or more to taste
4 cooked hot dogs
4 toasted buns
1. Make salsa: Combine cucumber, pepper, scallions, mint, ginger, vinegar, lime juice, sesame oil, sugar and salt in a medium bowl. Stir to dissolve sugar.
2. Make mayonnaise: Combine mayonnaise and sriracha in a small bowl.
3. Spread some mayonnaise on one side of each bun, place hot dogs in buns and top with salsa.
