French restaurant Bistro Citron to be replaced by Italian restaurant in Roslyn

A fixture overlooking Roslyn's duck pond since 2003, Bistro Citron has closed. Reststar Inc., the owners, will be replacing the casual French eatery with a casual Italian one, Salumeria Pomodoro.
According to Jason Machado, one of Reststar's partners, "Citron had run its course. It wasn't able to keep up with the changing atmosphere in Roslyn and we thought an Italian restaurant would be in a better position to compete."
(Long Islanders craving Citron's escargot or steak frites shouldn't despair: Reststar's other French restaurants, Brasserie Cassis in Plainview, Bistro Cassis in Huntington and La P'tite Framboise in Port Washington have very similar menus.)
Machado noted that Reststar's roots are Italian. His father, Fabio Machado, was the founder of the Pomodoro and Pomodorino restaurants that once flourished in Port Washington, Huntington, Southampton and New Hyde Park. But, he said, the new Roslyn place would be "more interesting."
In Italy, a salumeria is a store that specializes in cured pork products. Machado said that Salumeria Pomodoro would focus on house-cured sausage and imported prosciutto and cheeses, homemade pastas. The restaurant is getting a complete makeover and the new chef will be John Kaunas, who has cooked in Manhattan and Chicago.
Look for an October opening.
