Some new hands have come on deck at Landshark Restaurant  in Freeport. Consulting chef John Brill, whose prior stints include Red Fish in Plainview and the former 105 Harbor in Cold Spring Harbor, brings his signature Sichuan calamari ($14) and more to the Nautical Mile address. Executive chef Joe Ricci, who cooked with Brill at both Red Fish and 105 Harbor, will be a daily force in the kitchen, turning out such dishes as maple mustard glazed Pacific salmon ($24) and Jack Daniels glazed rib-eye ($28).

At Landshark's more casual tiki bar across the street, there will be barbecue hot off the grill and out of the smoker from chef Derrick “Big D” Sartor, once personal chef to NBA player Stephon Marbury as well as rapper P. Diddy.  From the parking lot of the bar, Sartor will be smoking Island style BBQ ribs (whole rack $28, half rack $16) as well as grilling “drunken” BBQ chicken ($19).

Landshark Restaurant opens for the season tomorrow at noon, as does Landshark Tiki Bar, weather permitting. (Since the tiki bar is entirely outdoors, it closes in inclement weather.)
