NYC omakase pop-up selling out in the Hamptons. Is it worth the hype? You decide.

Long Island sushi lovers, here's something to put on your radar. A highly-regarded NYC omakase spot is coming to the Hamptons this summer with a buzzy four-night pop-up.
Sushi Koju is an intimate 14-seat omakase experience in the Ace Hotel in Downtown Brooklyn. Chef Kevin Garrison is known for dry aging his fish, which takes out some of the moisture and is said to create a more silken texture. His food garnered a rave review from Scott Lynch in "Brooklyn Magazine" back 2025, who said "there were straight bangers throughout the two-hour, $145, 14-course omakase."

Now, Garrison is coming to the LDV at The Maidstone Hotel in East Hampton for an 18-course omakase experience, which will run you $386.25 per person, including tax and tip. The admission comes with a welcome spritz, but no sake or alcohol pairings. It's being held outdoors in the garden area, with one seating for 10 people per night at 7 p.m. The first two dates, July 13 and 27, are already sold out. But Aug. 17 and 31 are still available.
Dishes will include Garrison's signature king salmon nigiri, which is aged for 10 days, before being cold smoked in front of the guests and topped with Osetra caviar. He'll also be serving a local fluke sashimi with ponzu sauce and freshly shaved truffles, as well as a Montauk bluefin tuna trio with otoro, chutoro and akami.
