If you think that France has a lock on sparkling wine, Bistro Etc. in Port Washington wants to change your mind. Chef-owner Karen Melanie is cooking a prix-fixe dinner on Dec. 10 that pairs four courses with selections from the Spanish winery Raventos i Blanc. The menu:

Grilled oysters with ponzu and tobiko mignonette granita

Silencis (still white wine)

Seafood sausage with citrus beurre blanc

2011 Conca del Riu Anoia Brut, “L’Hereu” (white sparkling)

Beef tenderloin with seared foie gras, crispy shallot

2010 Conca del Riu Anoia Brut, “De la Finca” (Gran Reserva sparkling)

Tourte de blette (Swiss chard tart)

2012 Conca del Riu Anoia Brut Rose, “de Nit” (rose sparkling)
