The dumpling known as the wonton, said to have originated in Canton during the 17th century, became popular in Hong Kong after World War II and ultimately found its way to North America.
While it can be made any number of ways, most frequently, wontons are filled with pork and boiled before going into a chicken-based broth. Since the word wonton translates as "swallowing clouds," the rule is the lighter, the better.
