It happens every year: City hipsters, famous faces and well-to-do party people flood the Hamptons on summer weekends to dine in style and pay serious dough to hang out at swanky nightspots.

Here's a look at what's hot, what's new and what's back.

ALREADY HOT

SOUTH POINTE

125 Tuckahoe Rd., Southampton

917-574-4112, southpointeny.com

It's the talk of the Hamptons this season -- the buzz started Memorial Day weekend, when pop star Katy Perry paid a surprise visit. But the club's real draw is the internationally known DJs who are set to spin all summer. There are serious lines of people (generally younger than 35) competing to get in -- bubbly bottle service is your sure ticket, running from a $450 Moet and Chandon Brut Imperial to $6,300 for a '9l Moet Chandon Salamanazar.

GEORGICA RESTAURANT AND LOUNGE

108 Wainscott Stone Rd., Wainscott

631-537-6255, georgicarestaurant.com

A fine dinner draw -- go for anything on the seafood menu -- but come weekend nights, the lounge packs out with a well-dressed clientele that ranges from mid-20s to mid-40s. It's often a great place for celeb-spotting. Bottle service Champagne starts at $350.

WHAT'S NEW

BEAUMARCHAIS

44 Three Mile Harbor Rd., East Hampton

212-675-2400, beaumarchaiseasthampton.com

The Manhattan-based French restaurant now has an East End outpost. The tradition of "Beau Brunches" continues, too, with Saturday and Sunday afternoons starting off with meals that segue into DJ music at club-worthy volumes by 2 p.m. It's a packed scene (many wear white) -- and there are go-go girls, confetti and table service, just like a nightclub, except the party wraps by 6 p.m. On Fridays and Saturdays, the space hosts dance nights.

HAMPTONS PLAYERS CLUB

103 Montauk Hwy., East Hampton

631-324-1663, hamptonsplayersclub.com

The main focus at this polo-inspired spot is dining, but the large bar area is busy with guests sipping cocktails -- and the patio is now a beer garden with a ping-pong table. Head around back to find the lounge: a VIP area where table service bottles run from $375 to a Hamptons-esque $21,000 (the latter for a 6L Cristal)

NAMMOS ESTIATORIO

136 Main St., Southampton

631-287-5500, nammossouthampton.com

Nello Summertimes, no more -- the space has given way to this contemporary Greek restaurant. Take a walk around to the rear of the property to find a speakeasy-style entrance that leads to a lounge with a medium-size bar and dance floor. It's connected to a courtyard with daybeds.

HAMPTON QUARTERS

363 Dune Rd., Hampton Bays

631-728-2103, hamptonquarters.com

This waterside restaurant may be family-friendly during mealtimes, but with live music, DJs on weekends and a 4 a.m. close, it also provides a new injection of club-style potential to the Dune Road scene.

WHAT'S BACK

SL East, the East Hampton extension of SL Manhattan, has returned for a second season. Open only on Saturday nights (and some Sundays come holiday weekends), DJs play big, pulsating dance. Expect to pay at least $1,500 for a table (sleast.com, 44 Three Mile Harbor Rd.).

Neptune Beach Club (70 Dune Rd., East Quogue, 631-653-8737, neptunebeachclub.net) returns for its 23rd year as the seaside spot where party people find big-beat DJs.

In Montauk, a change of ownership at Surf Lodge brings a quieter scene, but live music is still a major part of the happenings (631-668-1562, thesurflodge.com).

Ruschmeyers is enjoying another summer as a hipster destination, with its summer campy outdoor area (631-668-2877, visitruschmeyers.com).
