Fashion and fishin' in Sagaponack with Nicole Miller

When she’s not in stilettos, you might find Nicole Miller in rubber boots in the Peconic.
"I’m a clammer,” she told us at the Green Gala Saturday night at the Wolffer Estate in Sagaponack. “I’ve got every kind of knife: for oysters and clams.”
She was a perfect fit to co-chair the eco conscious gala, celebrating local farms and chefs. She started preparations for her own farm to table meal that morning: clamming in the Peconic Bay outside her own North Haven backyard. “I got 25 clams in five minutes,” she said, “and didn’t have to move my fee. I thought if I get any more, they’re going to go to waste.”
We’re all about not wasting tonight. How are we eating them? “I’m going to make these into stuffed clams. I’ve got a great recipe: clams, chorizo, bread crumbs and jalapeno.”
She says her kitchen is well stocked with every kind of clam or oyster knife imaginable. “But oysters are a lot easier to open than clams.
Did we mention Miller loves cooking as well as clamming?
And she cares deeply about protecting the East End. “This is a great organization because it is all about conversation and educating people,” she said. “I’ve watched this event evolve through the years. This year all many of the auction items are green. I donated a silk dress, and I think it’s biodegradable!”
Getting back to those stilettos: Please tell us flats are in for fall? “Absolutely not,” the fashionista declared. She doesn’t like long skirts when the leaves change either. “In the winter, I like short skirts, hose and boots,” said the designer. Who doesn’t like that?
