Though so many dads these days are opting for grilled fish, steak still seems to be the traditional dish of Father's Day. Here are some favorite restaurants:

BLACKSTONE STEAKHOUSE,

10 Pinelawn Rd., Melville, 631-271-7780. In a stone-and-wood style space, Blackstone offers up first-class cuts of beef: a juicy rib steak, hefty porterhouse and fibrous, salt-edged sirloin. $$$-$$$$FRANK'S STEAK, 54 Lincoln Ave., Rockville Centre, 516-536-1500, and 4 Jericho Tpke., Jericho, 516-338-4595. The restaurant mini-chain has built a reputation for its marinated Romanian skirt steak, which is juicy and sweet. Better are the porterhouse for two, the peppercorn-crusted rib-eye and the garlicky rib-eye. There's husky prime rib, too. $$$INSIGNIA, 610 Nesconset Hwy., Smithtown, 631-656-8100. A brassy palace of protein. Kansas City strip steak stands out, despite its gilding of truffled foie gras butter. Also notable: porterhouse for two or more; fist-size cut of filet mignon; Wagyu steaks and the 16-ounce Australian rib-eye. $$$$JIMMY HAYS, 4310 Austin Blvd., Island Park, 516-432-5155. There is no arguing with the prime beef, dry-aged on the Jimmy Hays premises. Dig into the 17-ounce New York strip, filet mignon, Porterhouse and chateaubriand for two. $$$
