The newly released "Meatless" from the kitchens of Martha Stewart Living (Clarkson Potter, $25) not only gives more than 200 recipes, but illustrates each with an exacting and colorful photograph. From grilled asparagus and ricotta pizza to quinoa and green bean salad, this paperback is downright inspirational. Most of the recipes are easy, too.
