What happens after dark at a brunch spot? Sayville's trippy, teacup of a space with an "Alice in Wonderland" theme, Brunch, has launched an After Dark series of chef’s dinners in the off-hours.

For $95, diners get a five-course meal that brings together two local chefs — owner Michelle Panciarello, known for her rustic brunch dishes, and barbecue expert Keith Lombardo, of the catering company, BBQ King Long Island. This is a chef's table concept, which means the menu relies on seasonal produce and changes weekly, a departure from their usual fare. Guest chefs will also make appearances in the series; on Friday evening chef Jen O’Gorman, of Rogue Dinner Company, headlined with Panciarello in lieu of Lombardo.

The debut menu featured a fennel and blood orange salad made with greens, a buttermilk cornbread Madeleine with citrus-glazed crispy pork belly, a raviolo "BEC" filled with carbonara, bacon and ricotta, and steak frites — a beef tenderloin — with potatoes two ways and charred broccolini. Milk and cookie flights capped the meal. The latest featured deviled quail eggs with house-made Calabrian chili oil caviar, risotto with duck prosciutto, chicken Provencal with Roman artichoke, asparagus and preserved lemon, a structured ratatouille with stracciatella, and rhubarb upside-down cake.

After Dark takes place on Thursday, Friday and Saturday evenings. There’s currently only one seating, at 6 p.m., but April will bring a second seating. BYOB is encouraged, and there is no corkage fee. With limited seating, reservations are essential.
