Long Island coffee shops have been opening with frequency over the past couple of years. The latest transplant originated in Deerfield Beach, Florida, in 2024, and has three stores opening across the Island in coming months. One will be in Huntington, the other in East Northport, while the first, in Roslyn, opened in July.

Anchoring an office and apartment building across from the Roslyn train station, Pilar Coffee Bar isn’t your run-of-the-mill shop. The creaky, wooden floors and community flyer boards have been replaced by matte white, large tiles, blond wood, a backlit logo and earth tone accents. Corporate yet chic in feel, the expanding brand is owned by Steve Giordanella, a Long Island native and CEO behind the fast casual concept I Heart Mac & Cheese, also founded in Florida. Justin Johnson, a partner in the Roslyn location, did not return request for comment.

According to its website, Pilar uses Brazilian and Colombian beans in its coffee drinks, and the Roslyn site serves a vast menu of freshly made breakfast items, from BECs on croissants to avocado toast ($9.95), omelets, waffles ($7.95), overnight oats ($8.95) and bowls including acai ($9.95) and grain ($13.95). For lunch there are salads, and sandwiches including turkey and bacon ($12.95), muffuletta ($12.95) and hot honey chicken ($13.95) versions. There are also flatbreads for the savory food lovers and gelato (starting at $4.95), cookies, brownies and other treats for the sweet-toothed.

The usual selection of coffee drinks, from cappuccinos ($5.95) to lattes ($5.50) and iced Americanos ($4.95) abound. Signature lattes include honey cinnamon, cookie butter and toasted marshmallow, all starting at $6.95. There are signature teas, hot and cold, milk alternatives from oat to almond to coconut, as well as protein milk (+$1).

The East Northport store will sit at the far end of the Elwood shopping center, adjacent to Wayward Burgers and Twisted Greek. The Huntington store will replace Christopher’s restaurant. Calls to management about the Roslyn opening were not returned.
